Ingredients

  • 1 head of cauliflower, riced
  • 2 tablespoons vegetable oil
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1/2 cup diced green onions
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add diced carrots and cook for 2-3 minutes until they start to soften.
  3. Add frozen peas and diced onion, and cook for an additional 2 minutes.
  4. Push the veggies to one side of the pan and add the remaining 1 tablespoon of vegetable oil to the empty side.
  5. Add minced garlic to the oil and sauté for about 30 seconds until fragrant.
  6. Add the riced cauliflower to the pan and stir-fry for 3-4 minutes, mixing it with the veggies.
  7. Push the cauliflower to one side, pour the beaten eggs into the empty side, and scramble them until cooked through.
  8. Combine the eggs with the cauliflower and veggies.
  9. Drizzle soy sauce and sesame oil over the mixture and stir-fry for an additional 2 minutes.
  10. Add diced green onions and season with salt and pepper to taste.
  11. Remove from heat and serve your Cauliflower Fried Rice hot.
