  • 2 cups of long-grain white rice
  • 1 pound of chicken breast, diced
  • 1 cup of broccoli florets

  • 1/2 cup of diced onions
  • 2 cloves of garlic, minced
  • 1/4 cup of chicken broth
  • 1/2 cup of heavy cream

  1. Start by cooking the rice according to the package instructions. Set it aside.
  2. In a large skillet, heat some olive oil over medium-high heat. Add the diced chicken and cook until it’s no longer pink. Remove it from the skillet and set it aside.
  3. In the same skillet, add a bit more olive oil if needed. Sauté the onions, garlic, mushrooms, and broccoli until they’re tender.
  4. Return the cooked chicken to the skillet and add the cooked rice, chicken broth, and heavy cream. Stir everything together and let it simmer for a few minutes.
  5. Finally, sprinkle the grated cheddar cheese on top, cover the skillet, and let it melt.
  6. Season with salt and pepper to taste, and serve your comforting rice casserole hot.
