  1. In a saucepan, heat the chicken or vegetable broth and keep it warm over low heat.
  2. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.
  3. Add chopped onions and garlic, sauté until translucent.
  4. Add the mushrooms and cook until they release their moisture and become golden brown.
  5. Remove the mushrooms from the skillet and set aside.
  6. In the same skillet, add the remaining olive oil and Arborio rice. Cook, stirring constantly, until the rice is lightly toasted.
  7. Pour in the white wine and cook until it is absorbed by the rice.
  8. Begin adding the warm broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding more. Continue this process until the rice is creamy and cooked to al dente texture.
  9. Stir in the sautéed mushrooms, grated Parmesan cheese, and remaining butter. Season with salt and pepper to taste.
  10. Remove from heat and let it rest for a few minutes before serving.
  11. Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
