Instructions

  1. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the Arborio rice and cook for 2 minutes, stirring constantly.
  4. Pour in the white wine and cook until it’s almost evaporated.
  5. Add the sliced mushrooms and continue to cook until they are tender and browned.
  6. Begin adding the broth, one ladleful at a time, stirring constantly until the liquid is absorbed before adding more.
  7. Continue this process until the rice is creamy and cooked to your desired consistency (about 18-20 minutes).
  8. Stir in the remaining butter, grated Parmesan, salt, and pepper.
  9. Remove from heat, garnish with fresh parsley, and serve hot.
