Instructions

  4. Dip each eggplant slice into the beaten eggs and then coat with the breadcrumb mixture. Place them back on the baking sheet.
  5. Bake the breaded eggplant slices for about 15-20 minutes, or until they are golden brown and crispy.
  6. In a separate saucepan, heat the marinara sauce over medium heat.

  8. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool slightly before serving. Garnish with fresh basil leaves.
