Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a shallow bowl, combine breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper.
  3. Dip each eggplant slice into the breadcrumb mixture, coating both sides, and place them in the baking dish.
  4. Bake the eggplant slices for 20-25 minutes, or until they are golden brown and crispy.
  5. Remove the eggplant from the oven and reduce the oven temperature to 350°F (175°C).
  6. Spread a thin layer of marinara sauce on the bottom of the baking dish, then arrange a layer of baked eggplant slices on top.
  7. Sprinkle mozzarella cheese over the eggplant and repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  8. Bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before serving.
