Instructions

  1. Start by cooking the sushi rice according to the package instructions. Let it cool to room temperature.
  2. Place a bamboo sushi rolling mat on a clean surface and cover it with plastic wrap.
  3. Place a sheet of nori, shiny side down, on the bamboo mat. Wet your hands to prevent the rice from sticking, and evenly spread a thin layer of sushi rice over the nori, leaving about half an inch of nori at the top.
  4. Arrange cucumber, carrot, and avocado slices in the center of the rice.
  5. Carefully lift the bamboo mat’s edge and start rolling the nori and rice over the filling, using the mat to shape it into a tight cylinder.
  6. With a sharp knife, moistened with water to prevent sticking, slice the roll into bite-sized pieces.
  7. Repeat with the remaining nori sheets and ingredients.
  8. Serve your fresh cucumber sushi rolls with soy sauce, and if you like, accompany them with pickled ginger and wasabi.
