Ingredients

  • 6 ripe tomatoes, diced
  • 2 cucumbers, peeled and chopped
  • 1 red bell pepper, diced
  • 1 red onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. In a blender or food processor, combine the diced tomatoes, cucumbers, red bell pepper, red onion, and garlic.
  2. Pulse until the vegetables are finely chopped but not pureed.
  3. Transfer the mixture to a large bowl and stir in the tomato juice, red wine vinegar, and olive oil.
  4. Season with salt and black pepper, and refrigerate for at least 2 hours before serving.
