Ingredients

  • 2 cups Arborio rice
  • 4 cups vegetable broth

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm over low heat.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and sliced mushrooms. Cook until the mushrooms are tender and browned.
  4. Stir in the Arborio rice and cook for a minute until the rice is well coated with the oil and slightly translucent.
  5. Pour in the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is almost completely absorbed before adding the next ladle of broth.
  7. Cook the risotto until it is creamy and the rice is al dente, about 18-20 minutes.
  8. Stir in the remaining butter and grated Parmesan cheese. Season with salt and black pepper to taste.
  9. Serve the Gourmet Mushroom Risotto hot, garnished with chopped fresh parsley.
