Ingredients

  • 2 cups Arborio rice
  • 1 cup mixed gourmet mushrooms (e.g., shiitake, oyster, porcini)
  • 4 cups vegetable broth
  • 1/2 cup dry white wine
  • 2 tablespoons truffle oil
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large saucepan, heat the vegetable broth over low heat. Keep it warm but not boiling.
  2. In a separate large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Add the Arborio rice to the skillet and stir to coat it with the butter. Cook for 2-3 minutes until the rice turns slightly translucent.
  4. Pour in the white wine and cook until it’s mostly absorbed by the rice.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
  6. Continue this process until the rice is creamy and tender, which should take about 18-20 minutes.
  7. Stir in the mixed gourmet mushrooms and cook for another 5 minutes until they’re tender.
  8. Remove from heat and stir in the truffle oil and grated Parmesan cheese. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and serve immediately.
