Hearty Butternut Squash Soup

Ingredients
- 1 medium-sized butternut squash
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth

- 1/2 cup of heavy cream (optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Cut the butternut squash in half lengthwise, scoop out the seeds, and place it on a baking sheet.
- Roast the squash in the oven for about 45 minutes, or until it’s tender and can be easily pierced with a fork.
- While the squash is roasting, heat olive oil in a large pot over medium heat. Add the diced onion and garlic, sautรฉ until softened.
- Once the squash is done, let it cool slightly, then scoop out the flesh and add it to the pot with the onion and garlic.
- Add the vegetable broth, cinnamon, nutmeg, salt, and pepper to the pot. Bring to a simmer and let it cook for 15-20 minutes.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer it to a blender in batches.
- If desired, stir in the heavy cream for extra creaminess.
- Simmer for an additional 5 minutes to heat through, then serve hot.
