Hearty Moroccan Tagines

  • 2 lbs boneless lamb, cut into chunks
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp saffron threads
  • 1 cup chicken broth
  • 1 cup canned chickpeas, drained
  • 1 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish


  1. Heat a tagine or large, heavy-bottomed pot over medium-high heat.
  2. Add the lamb chunks and brown them on all sides.
  3. Remove the lamb from the pot and set it aside.
  4. In the same pot, add the chopped onions and sauté until they become translucent.
  5. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, and saffron threads. Sauté for a couple of minutes until fragrant.
  6. Return the browned lamb to the pot and add the chicken broth. Bring to a simmer, cover, and let it cook for 1.5 to 2 hours, or until the lamb is tender.
  7. Stir in the chickpeas and chopped dried apricots. Cook for an additional 10-15 minutes.
  8. Season with salt and pepper to taste.
  9. Serve the Hearty Moroccan Tagines hot, garnished with fresh cilantro leaves.
