  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons water

  • Chopped fresh parsley, for garnish

Instructions

  1. In the bowl of a food processor, combine tahini and lemon juice. Process for 20 seconds.
  2. Add minced garlic, olive oil, cumin, and a pinch of salt to the mixture. Process until smooth.
  3. Add half of the chickpeas and process for about one minute. Scrape down the sides and bottom of the bowl, then add the remaining chickpeas. Process until the hummus is creamy and smooth.
  4. If the hummus is too thick, add 2-3 tablespoons of water while the food processor is running until you reach the desired consistency.
  5. Taste the hummus and adjust the seasoning by adding more salt or lemon juice if needed.
  6. Transfer the hummus to a serving bowl and drizzle with extra-virgin olive oil. Sprinkle with paprika and garnish with chopped fresh parsley.

Yield: About 2 cups
