Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar

  • 1/2 cup cold unsalted butter, cubed
  • 1 cup whole milk

Instructions

  1. Gently toss the sliced strawberries with 1/4 cup of granulated sugar. Let them sit for 30 minutes to release their juices.
  2. In a large bowl, whisk together the flour, 1/4 cup of granulated sugar, baking powder, and salt.
  3. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  4. Stir in the milk and vanilla extract until just combined.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Pat the dough into a 1-inch thick rectangle and use a round biscuit cutter to cut out shortcakes.
  7. Bake the shortcakes in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
  8. While the shortcakes cool, whip the heavy cream and powdered sugar together until stiff peaks form.
  9. To serve, split the shortcakes in half, spoon the macerated strawberries onto the bottom half, top with a dollop of whipped cream, and cover with the top half of the shortcake.
