Ingredients

  • 3 medium zucchinis, thinly sliced
  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups sugar-free marinara sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat and stir in the minced garlic and marinara sauce. Simmer for 10 minutes.
  2. In a bowl, combine the ricotta cheese, egg, dried basil, dried oregano, and a pinch of salt and pepper.
  3. Preheat your oven to 350°F (175°C).
  4. Assemble the lasagna by layering zucchini slices, meat sauce, ricotta mixture, and mozzarella cheese in a baking dish. Repeat the layers until all ingredients are used, finishing with a layer of mozzarella and a sprinkle of Parmesan cheese on top.
  5. Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes until bubbly and golden.
  6. Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
