  7. Spoon half of the mushroom and spinach mixture over the cheese.
  8. Top with the second tortilla and press down gently.
  9. Cook until the bottom tortilla is golden and crispy, about 3-4 minutes.
  10. Flip the quesadilla and cook the other side until it’s also golden and the cheese is melted.
  11. Remove from the skillet, let it cool for a minute, and then cut into wedges.
