  • 1 cup of quinoa
  • 1 1/2 cups of water
  • 1 cucumber, diced

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.
  3. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, extra-virgin olive oil, salt, and pepper. Drizzle the dressing over the salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  6. Before serving, taste and adjust the seasoning if needed. You can also garnish with extra herbs and feta cheese if desired.
