  • 2 cups long-grain white rice
  • 1 lb Andouille sausage, sliced
  • 1 lb boneless chicken thighs, diced

  • 1 can (14 oz) diced tomatoes
  • 1 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 3 cups chicken broth

  1. In a large, heavy-bottomed pot, heat some oil over medium-high heat. Add the sliced Andouille sausage and cook until browned. Remove and set aside.
  2. Add diced chicken thighs to the same pot. Cook until browned and cooked through. Remove and set aside.
  3. In the same pot, sauté chopped onion, diced green bell pepper, and minced garlic until softened.
  4. Stir in the diced tomatoes, Cajun seasoning, dried thyme, and cooked rice. Cook for a few minutes to combine the flavors.
  5. Return the cooked sausage and chicken to the pot. Pour in chicken broth, and season with salt and pepper. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and has absorbed the flavors.
