Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the eggplant rounds on a paper towel-lined baking sheet and sprinkle with salt. Let them sit for 30 minutes to release excess moisture.
  3. In three separate bowls, place the flour in one, beat the eggs in another, and combine the breadcrumbs with grated Parmesan cheese in the third.
  4. Dip each eggplant slice into the flour, then the beaten eggs, and finally the breadcrumb mixture, pressing the breadcrumbs onto the slices to adhere.
  5. Heat olive oil in a large skillet over medium heat. Fry the eggplant slices until they’re golden brown on both sides, about 2-3 minutes per side. Drain them on paper towels.
  6. In a baking dish, spread a layer of marinara sauce. Arrange a layer of fried eggplant slices on top, followed by a sprinkle of mozzarella cheese and a pinch of dried oregano. Repeat the layers until all ingredients are used.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  8. Garnish with fresh basil leaves and serve hot.
