  • 2 cups cooked jasmine rice

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce

  • 1/4 cup roasted cashews
  • 2 green onions, chopped

Instructions

  1. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add diced carrots and bell peppers, stir-fry for 2-3 minutes until slightly tender.
  4. Push the vegetables to one side of the wok and add the beaten eggs. Scramble the eggs until cooked through.
  5. Add the cooked jasmine rice to the wok and stir-fry for another 2-3 minutes.
  6. Stir in diced pineapple and frozen peas, cook for an additional 2 minutes.
  7. Drizzle soy sauce and oyster sauce over the rice, mixing well to combine.
  8. Season with salt and pepper to taste.
  9. Finally, toss in roasted cashews and chopped green onions.
  10. Remove from heat and serve your Pineapple Fried Rice hot, garnished with extra green onions if desired.
