  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them thoroughly.
  3. In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, red onion, diced bell peppers, cilantro, ground cumin, chili powder, salt, and pepper. Mix well.
  4. Stuff each bell pepper with the quinoa mixture, pressing it down gently to pack it in.
  5. Place the stuffed bell peppers in a baking dish, and cover with aluminum foil.
  6. Bake for 25-30 minutes or until the bell peppers are tender.
  7. Remove the foil and bake for an additional 5-10 minutes to allow the tops to brown slightly.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Garnish with extra cilantro if desired, and enjoy your vegan delight!
