  • 4 large onions, thinly sliced
  • 4 tablespoons butter

  • 8 cups beef broth

  • 1 bay leaf
  • Salt and black pepper to taste
  • Baguette slices
  • 2 cups Gruyere cheese, grated


  1. Heat the butter and olive oil in a large pot over medium-low heat.
  2. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 45 minutes.
  3. Sprinkle sugar over the caramelized onions and cook for an additional 5 minutes.
  4. Pour in the white wine and cook until it has mostly evaporated, scraping up any browned bits from the bottom of the pot.
  5. Add the minced garlic and cook for another 2 minutes.
  6. Pour in the beef broth and add the bay leaf. Simmer for 20-30 minutes.
  7. Preheat the oven broiler.
  8. Ladle the soup into ovenproof bowls, top each with a slice of baguette, and sprinkle with Gruyere cheese.
  9. Place the bowls on a baking sheet and broil until the cheese is bubbly and golden brown, about 2-3 minutes.
  10. Remove from the oven, let cool slightly, and serve hot.
