  • 2 cups cooked chicken, diced
  • 1 cup carrots, peeled and sliced
  • 1 cup frozen peas
  • 1/3 cup butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon garlic powder
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 2 unbaked pie crusts

  1. Preheat your oven to 425°F (220°C).
  2. In a large saucepan, melt the butter over medium heat. Add onions and cook until they are soft and translucent.
  3. Stir in the flour, salt, pepper, celery seed, and garlic powder until well combined.
  4. Slowly pour in the chicken broth and milk, stirring constantly. Cook and stir until the mixture thickens and becomes smooth.
  5. Add the chicken, carrots, and peas. Mix well and remove from heat.
  6. Line a pie dish with one of the pie crusts. Pour the chicken mixture into the crust.
  7. Cover with the second pie crust, seal the edges, and cut away any excess dough. Make several small slits in the top crust to allow steam to escape.
  8. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
