Spicy Cajun Jambalaya

Ingredients

  • 2 cups of long-grain white rice
  • 1 pound of Andouille sausage, sliced

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the sliced Andouille sausage and cook until browned. Remove from the skillet and set aside.
  3. Add the chicken pieces to the skillet and cook until they are no longer pink. Remove and set aside.
  4. In the same skillet, add the chopped onion and green bell pepper. Cook until they are softened.
  5. Stir in the minced garlic and cook for another 30 seconds.
  6. Return the cooked sausage and chicken to the skillet.
  7. Add the rice, diced tomatoes (with their juice), chicken broth, Cajun seasoning, paprika, dried thyme, dried oregano, and cayenne pepper to the skillet. Season with salt and black pepper to taste.
  8. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.
  9. Once cooked, fluff the Jambalaya with a fork and garnish with chopped green onions.
