  • 4 slices of thick-cut bacon
  • 4 large eggs
  • 1 cup of all-purpose flour
  • 1 cup of milk
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of chopped fresh chives
  • 1/4 cup of maple syrup
  • 1/4 cup of unsalted butter


  1. Preheat your oven to 350°F (175°C) and place a baking sheet inside to warm.
  2. Cook the bacon in a large skillet over medium-high heat until it’s crispy, then drain it on paper towels and crumble it into small pieces.
  3. In a mixing bowl, whisk together the flour, milk, salt, and pepper until a smooth batter forms.
  4. Stir in the shredded cheddar cheese and chopped chives into the batter.
  5. Remove the preheated baking sheet from the oven and melt the butter on it, making sure it coats the entire surface.
  6. Pour the batter evenly over the melted butter.
  7. Sprinkle the crumbled bacon on top of the batter.
  8. Bake in the preheated oven for 25-30 minutes, or until the pancake is puffed up and golden brown.
  9. While the pancake is baking, fry the eggs in a separate skillet to your desired level of doneness.
  10. Once the pancake is done, remove it from the oven and drizzle it with maple syrup.
  11. Serve slices of the pancake with fried eggs on top.
