Ingredients

  • 2 large sweet potatoes, peeled and diced

  • 1/2 teaspoon chili powder
  • 8 small corn tortillas
  • 2 cups enchilada sauce
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat some olive oil over medium heat. Add the diced sweet potatoes and cook until they start to soften, about 5 minutes.
  3. Add the diced onion and garlic to the skillet and sautรฉ until the onions are translucent.
  4. Stir in the black beans, cumin, smoked paprika, and chili powder. Cook for another 2 minutes, then remove from heat.
  5. Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.

  7. Roll up the tortillas and place them seam-side down in the prepared baking dish.
  8. Pour the remaining enchilada sauce over the top and sprinkle with more cheese.
  9. Cover the dish with foil and bake for 20-25 minutes, until the enchiladas are heated through and the cheese is melted.
  10. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and golden.
  11. Garnish with fresh cilantro and serve hot.
