  2. In a heatproof bowl, whisk together the egg yolks and granulated sugar. Place the bowl over a pot of simmering water and whisk constantly until the mixture thickens and becomes pale in color.
  3. Remove the bowl from the heat and let it cool slightly. Then, whisk in the mascarpone cheese until smooth.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture until well combined.
  6. Dip each ladyfinger into the coffee mixture briefly and layer them in a serving dish.
  7. Spread a layer of the mascarpone mixture over the ladyfingers.
  8. Repeat the layers, finishing with a layer of mascarpone mixture on top.
  9. Cover and refrigerate the tiramisu for at least 4 hours or overnight to allow the flavors to meld.
  10. Before serving, dust the top with unsweetened cocoa powder and garnish with chocolate shavings.
