Tasty Vegan Breakfast Burrito

  • 2 cups of tofu scramble
  • 1 cup of black beans
  • 1/2 cup of diced bell peppers

  1. Start by preparing the tofu scramble. Heat a skillet over medium heat and crumble the tofu into it.
  2. Add the cumin, paprika, salt, and pepper to the tofu. Cook for 5-7 minutes until it resembles scrambled eggs.
  3. In another pan, sauté the diced onions and bell peppers until they become tender.
  4. Add the black beans, diced tomatoes, and cilantro to the pan with the onions and peppers. Cook for an additional 3-4 minutes.
  5. Warm the whole wheat tortillas in a dry skillet for about 20 seconds on each side.
  6. Assemble the burritos by placing a portion of the tofu scramble, the black bean mixture, vegan cheese, and salsa onto each tortilla.
  7. Roll up the tortillas, folding in the sides as you go, to form burritos.
  8. Place the burritos back in the skillet for a minute on each side to heat through and melt the cheese.
