  • 1 cup quinoa
  • 2 cups vegetable broth

  • 1/4 cup feta cheese, crumbled

  1. Rinse the quinoa thoroughly under cold water.

  5. In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle the dressing over the quinoa mixture and toss to combine.
  6. Gently fold in the crumbled feta cheese and season with salt and pepper to taste.
